Hash de Palmito Fresco con Camote Dulce y Ahumado
This sweet and smokey hash is a quick and easy way to enjoy fresh hearts of palm with some other fragrant and flavorful ingredients.
Ingredients
- 1lb fresh heart of palm, sliced 
- 1 large sweet potato, cubed small 
- ½ yellow bell pepper, diced 
- ½ red bell pepper, diced 
- 1 small red onion, diced (makes about ½ cup) 
- 2 tsp smoked paprika 
- 3 tbsp olive oil 
- Coarse sea salt and fresh ground pepper to taste 
- Parsley for garnish 
Instructions
- Preheat oven to 375° 
- Mix all ingredients in a large bowl until the oil and spices are distributed evenly 
- Spread out all ingredients on a parchment paper lined cookie sheet and bake for 17-20 minutes. 
- Remove from oven and let cool off for a few minutes 
- Serve, garnish with parsley, and enjoy!
